Clean one pound of smelt – source from Locals Seafood
Mix 1/2 cup fish sauce, 2 tbsp water, 1 tbsp soy sauce & 4 tbsp sugar
Marinate fish in mixture for 30 minutes
Dredge fish in rice flour & fry in pan over medium heat for 2 minutes or until golden brown
Serve garnished with cilantro & lime wedges
