This roasted new potatoes with salmon caviar and crème fraîche recipe is good any time of the year – it’s comforting, fresh, and all around tasty. You really can’t go wrong with all the delicious ingredients in this dish.
Ingredients:
1 pound red new potatoes or fingerlings
1 oz salmon caviar
1 tub crème fraîche or sour cream
1 cup soy sauce
1/4 cup butter
Garnish: pea shoots and garlic scapes (or substitute scallions!)
Instructions:
Potatoes:
Roast potatoes in oven with oil and salt at 350 degrees for 15-20 minutes
Cool and set aside
Brown butter soy sauce:
Brown 1/4 cup butter in pan
Add 1 cup soy sauce
Combine potatoes, sauce, and garlic scapes (or scallions) in a saute pan until they come to a boil. Reduce heat and a simmer for 1 minute.
Assemble bowl with potatoes and sauce, add a dollop of crème fraîche and salmon caviar
