This roasted new potatoes with salmon caviar and crème fraîche recipe is good any time of the year – it’s comforting, fresh, and all around tasty. You really can’t go wrong with all the delicious ingredients in this dish. 

Ingredients: 

  • 1 pound red new potatoes or fingerlings

  • 1 oz salmon caviar 

  • 1 tub crème fraîche or sour cream

  • 1 cup soy sauce

  • 1/4 cup butter

  • Garnish: pea shoots and garlic scapes (or substitute scallions!)

Instructions:

  1. Potatoes:

    1. Roast potatoes in oven with oil and salt at 350 degrees for 15-20 minutes

    2. Cool and set aside

  2. Brown butter soy sauce:

    1. Brown 1/4 cup butter in pan

    2. Add 1 cup soy sauce

  3. Combine potatoes, sauce, and garlic scapes (or scallions) in a saute pan until they come to a boil. Reduce heat and a simmer for 1 minute.

  4. Assemble bowl with potatoes and sauce, add a dollop of crème fraîche and salmon caviar

  5. Yum!
