  1. Create marinade: mix 1/3 cup soy sauce, 1/3 cup mirin, 2 1/2 tbsp sugar, 1/4 cup rice vinegar

  2. Pan fry eggplants whole until soft inside

  3. Add eggplants to a bowl with the marinade & add 1 tsp minced garlic, 1 tsp minced ginger, & 1 to 2 hot chilies sliced

  4. Serve with thinly sliced leeks on top
