Ingredients:
4 cups kimchi (source from Li Mingβs Global Mart)
3/4 cup kimchi juice (key for flavor & color!)
4 tbsp chopped scallion
2 tsp salt
2 tsp sugar
2 cups flour
1 cup water
*In place of the kimchi, use scallions or shredded/ julienned vegetables that have been sauted & seasoned with soy sauce. When adding to pancake mixture, adjust moisture content with water as necessary.
Optional pancake sauce:
1/2 cup sesame oil
1/2 cup rice white vinegar
1/2 soy sauce
Instructions:
Mix ingredients together to form a batter that pours easily from a ladle.
Heat 1 tbsp oil in a pan on medium heat
Pour batter in pan in desired pancake size
Cook pancakes around 2-3 minutes on each side, until golden brown & crispy
Top with sauce & enjoy!
