Ingredients:

  • 4 cups kimchi  (source from Li Ming’s Global Mart)

  • 3/4 cup kimchi juice (key for flavor & color!)

  • 4 tbsp chopped scallion 

  • 2 tsp salt

  • 2 tsp sugar

  • 2 cups flour

  • 1 cup water

*In place of the kimchi, use scallions or shredded/ julienned vegetables that have been sauted & seasoned with soy sauce. When adding to pancake mixture, adjust moisture content with water as necessary.

Optional pancake sauce:

  • 1/2 cup sesame oil

  • 1/2 cup rice white vinegar

  • 1/2 soy sauce 

Instructions:

  1. Mix ingredients together to form a batter that pours easily from a ladle.

  2. Heat 1 tbsp oil in a pan on medium heat

  3. Pour batter in pan in desired pancake size

  4. Cook pancakes around 2-3 minutes on each side, until golden brown & crispy

  5. Top with sauce & enjoy!
